So this was our dinner the night that I posted my last post on keeping it simple. 

It is not a recipe, so I won't give you specifics. But it happened the way many of our dinners do. 

We started with a protein: tuna. Then we opened the fridge and took a look at what we had. Cucumbers. Apples. Carrots. Onions. 

Whip up a quick batch of rice to make it more filling. Top it off with rice vinegar and a tiny bit of canola mayonnaise. 

Serve it with tortilla chips.
